Fitness Food Friday: Grilled Peaches with Coconut Cream

Peaches and Ice Cream
It’s time for a healthy, sweet snack for a change. Peaches are an amazing fruit. They are filled with so many health benefits including antioxidants, vitamin C, vitamin A, carotene, potassium, fluoride, iron and the list goes on. To top it off you can even grill and bake these. The best time to buy peaches is from June all the way into the fall. I am sharing a recipe where it doesn't really matter what season it is, because we will be grilling them and adding some delicious flavors. This dish is so refreshing, easy, and inexpensive to prepare. As a bonus, it only takes a few ingredients. How perfect is that?
3 medium ripe peaches
1 tsp of vanilla
1 can of coconut milk, refrigerated
1/4 cup of chopped walnuts
Fresh mint (optional)
Place the peaches on the grill with the cut side down first. Grill on medium to low heat until they are soft. As a reference, this should take about 3-4 minutes on each side.
Scoop the cream off the top of the can of chilled coconut milk. Whip together coconut cream and vanilla with a handheld mixer or using a whisk by hand. Drizzle over each peach and top with cinnamon, mint, and walnuts to garnish.
